You know, the YouTubers that don't just review stuff, they actually go into detail about how things work. Post 'em.
Retro Game Mechanics Explained is exactly what it says on the tin:
The 8-bit Guy is the most competent man in the world and his channel's full of videos all about how old tech works:
And then of course, there's Techquickie, of Linus Tech Tips fame, where they give a rundown on various technical questions (Linus Media Group has a thread now because their content is going downhill + Linus is a cow; proceed with caution):
And while this doesn't exactly count for the thread, JerryRigEverything is consistently good and shows exactly what's inside new smartphones

Wowee this OP aged poorly, but I'll post the newer ones I've started watching:
Modern Vintage Gamer largely covers emulation, and goes into interesting details about gaming hardware:
The Geek Pub is 8-bit Guy's older brother. He uploads far less than 8-bit Guy, but his videos are solid, and he covers a lot of DIY electronics stuff, like Raspberry Pi things:
Displaced Gamers likes to play around with NES games and explore how their code works in Mesen (NES emulator), and holds your hand step-by-step:
