My personal favorite was Ed Edd n Eddy. Had hilarious slapstick humor, artistic styling, and amazing sound work where when I hear some of the noises from the show in a youtube video it instantly makes me think of the thing it's from in the show.

I also enjoyed the theme for it too, very catchy!
 
The Pirates of Dark Water

For an early 90s kids cartoon it was pretty ambitious in it’s world building and creativity. It took a chance of being a serialized cartoon instead of episodic which was rare at the time. It had its wacky humor at times but it also took more chances in being serious and treating its audience with a little more respect than usual. Really enjoyed this one growing up

The 1960s Spider-man series. Maybe this is an unpopular opinion but Paul Soles is the definitive voice for Spider-man for me. I also really find it funny how the spider symbol on Spidey's chest and back only has six legs instead of eight. I thought Peter Parker was supposed to be smart lol (but that's something that I probably would do too). The first season follows you're standard Spider-man plots with the usual familiar villain's. However I personally like the second and third seasons more since they were done by Ralf Bakshi and are really trippy and weird with some great music as well.
 
The Flintstones. Their modern inventions with sticks and stones always fascinated me. They also served as a comfort that humanity would go on even after a MAD situation.

I remember watching this cartoon when I was young, it was like a 3D anime.

I had a bunch of others, but this one caught my attention since it looked like something new, I believe it's called "Penguin no Mondai", or "A Penguin's Troubles".

But I also recall liking a lot "Doraemon":

Loved the movies, they were my favourites when I was very young.
 
I have vague memories of really liking “Rupert” (the bear) when I was a kid.
It was on Nickelodeon during the day, with that giant face and the talking stick in the commercials……
I have no idea why I liked it but that’s all I remember.
 
Xiaolin Showdown came along pretty late, but it definitely left a huge impression on me. The worldbuilding and stuff like that wasn't anything I had seen from other cartoons, at least that I can remember. You could just tell the showrunners actually gave a shit about telling a good story, and I sometimes look back at what we know now, wondering what if some of the things they wanted actually happened, like Jack Spicer becoming the fifth fighter of the team, repping Metal as his element. The episode with the siren also stood out to me, since it was a huge "sometimes appearances can be deceiving" episode.

The Genesis game was pretty dope. I remember always laughing at the in-game description of the chicken leg: "some food."
