This is the most relevant lead I think: 2013

It really took off in 2013 when many millennials tried to be young forever, refusing to take off their rose tinted glasses of the past, and succumbed to their Peter Pan syndrome.

Nobody taught a lot of millennials how to budget, cook, clean, garden, landscape, repair shit, do basic home improvements, or any of the other little things that are part of being a functioning adult. You never hear the term in poor rural areas, it was always some suburban dipshit whose parents failed abjectly at preparing them for life. As they started to explore these topics on their own and learn shit the hard way they came up with the term 'adulting' to describe the process. I think at its heart it's a term about becoming an adult 'too late'.

I guess that since the real big adult things of past generations, like buying or building their own place to live in and keep a stable job with possible career advancement, seem to be out of reach for many of them , then all the other aspects of the adult life they have to do, feel like nothing more than a roleplay, when they still live in a shared flat and change dead-end jobs as if they still were temps or interns.
I'd say those who got to own the place they live in and started their own family and have an actual career, don't use words like 'adulting'.

Not going to get better any time soon, I recently helped a bunch of zoomers fixing their appartments / houses etc. They never have any tools, even the humble screwdriver is nowhere to be seen.
