Which one would you rather be: blind in one eye or deaf in one ear?

Too risky to have a single eye. You are basically crippled if you lose your eyesight.
I'd lose sound in one of my ears because depth perception with eyesight is absolutely necessary for everything. If you've ever tried driving or even moving around with one eye closed, it becomes noticeably more difficult, because your brain isn't able to as easily calculate dimensions and distances. With one ear you can still do everything about the same, but with a slight degrade in sound quality, and weakened sound depth perception.
 
Deaf for sure. One of my relatives has slowly but surely losing sight in one eye and they've almost wrecked their car a couple times because their depth perception is messed up and it takes a long time to relearn how to judge distances and where objects are in space.
 
For the cool factor blind in one eye, can larp as Solid Snake.

Practically, deaf in one ear. Get a hearing aid in that ear, and the most relied upon sense of sight is preserved. You could probably live a fairly normal life with a hearing aid in 1 year.
