Too risky to have a single eye. You are basically crippled if you lose your eyesight.
I'd lose sound in one of my ears because depth perception with eyesight is absolutely necessary for everything. If you've ever tried driving or even moving around with one eye closed, it becomes noticeably more difficult, because your brain isn't able to as easily calculate dimensions and distances. With one ear you can still do everything about the same, but with a slight degrade in sound quality, and weakened sound depth perception.
