Usually you want non-lethal weapons to be extremely similar to your standard issue weapons because the training for each tends to overlap. From what I can tell, the Aussie cops use the G36. My guess is they went with an AR platform because it looks scarier than a paintball gun to normies.
Ya that's my assumption but I don't want to jump to conclusions when thoroughly objective criticisms of aussie cop faggotry are abundant.
The G36 isn't entirely dissimilar and I have no clue about the availability of comparable G36-based systems, but I also don't have time to go down a paintball research rabbit hole today.

That big ass thing on top of her rifle is a paintball hopper, meaning it is a paintball gun and not a firearm. The stock is also a compressed air tank with a sleeve over it. I don't recall a hopper or air tank being visible on the other rifle. Same colors but it may be different equipment. Sim rounds are fired from a brass casing with a gunpowder charge, meaning you wouldn't need any special equipment for them to function through a standard firearm.

It’s probably just the VKS without the hopper attached (but I think that point has already been made). I was wondering if the use of VXR projectiles instead of round projectiles demonstrates whether paint or pepper balls were being fired, but they each are sold in both form factors so I don’t think it does.

This legal aid site actually has a list of VicPol weapons. If accurate, VicPol does use AR-15s hence the VKS.

The discussions I'd seen in the past had always tended to focus on protests/policing in North America and Europe; for whatever reason, the situation in Australia never seemed to come up. Thanks for the links, that actually clears up something that puzzled me while watching the streams the last 2 days, the "pedophile cops" chants. I wasn't sure if the guys shouting about that were Pizzagaters (there were guys yelling about Satanists nearby too) or if they were referencing a historical scandal I hadn't heard about. That's some pretty fucked up shit.

Haven't really followed the Australian thing till recently, but I recall there were some really draconian police power laws passed there recently in under 24 hours right? I think I remember something about them having access to everyone's social media accounts, but I think that might be another bill they're cooking up and haven't passed yet.

So maybe there's some kind of mass blackout on any stream featuring the protests so people don't think there's one and don't join in? Kind of a stretch though, if they had the power to do that it'd be the biggest instance of government overreach I've seen in a modern western country. This is just me talking out of my ass anyway, but I seriously doubt that the momentum for a massive riot has stalled out after what happened last time in that union office.
