Truth of it was, my mother didn't like to bake very much, preferring to put her effort into serving balanced and flavorful meals that were different every day. There was no "meatloaf night" in our house and she never served us nasty crap like spam or creamed chipped beef, though there were things like tv dinners, canned ravioli and corned beef hash for nights they went out and left us to fend for ourselves.
