Dumb theory time: Jack started doing this post-stroke because he was forced to use his weaker hand. He wasn't as good at shovelling food in his mouth with his non-dominant hand and developed using his tongue as a food shovelling aid to keep being able to eat at the same speed and quantity as he did pre-dead arm.
