I'm not asking this to be a dick but, what's the appeal over a regular person doing the same thing?

I'll give you a serious answer.

One, it's not infested with camwhores, since their real appearance doesn't matter. So the streamer actually thinks about how to be interesting and engaging, rather than how to show off.

Two there's little threat of someone doing a serious dox, and SWATing their house or something. Because usually nothing is visible from their actual room, unless they choose to show it.

Three, because of the above, there's a lot of competent entertainers entering v-tubing. There's actually quite a lot of money involved (the highest superchatted channels on youtube are vtubers now). So we can get people who are good at singing, talking, or whatever else doing it behind the veil of a vtuber model. Some of them are "past their prime" in the normal entertainment industry, so although they have plenty of experience, the vtuber model benefits them.

Couple hours today were light on content for me, decided to check out Highping Monaca who was mentioned the other day.

Stream title just says it's a zatsu, but actually "Bronaca" (who I assume by the naming sense is her brother) prepared a folder of images and videos for her to react to. Many of which are a little cursed:

Found this on the channel of Reiny, a small (indie?) VTuber:

Appears to be finished VTuber designs/models looking for someone to fill them. Designs look pretty good to me, especially the second one. Wonder what the business model is like after the initial buy-in.
I like that they didn't even throw a bone to the troons, video explicitly says "women only".

I've published my thesis on this multiple times already, but here's the short version:
1) There are lots of people out there who have a lot of talent, but can't or don't want to participate in the hot tub meta. Avatars do a lot to level the playing field. and expand the base of available talents, so you get tons of gems that would have otherwise been undiscovered.
2) The avatar seems to minimize the ego-buffing effects of success; IRL streamers at the top end are largely a bunch of loudmouth self-promoters, while the top vtubers are a remarkably humble bunch.
3) As a corollary of 2, vtubers tend to be a lot less pushy about the money.
4) There's a much stronger emphasis on having an interesting voice, which pushes the right buttons for some people.

I like how formalized the content is. In there is a fixed way to do intros-, outros-, and there is a schedule of streams a week in advance with set-in-stone dates. It makes it easy to tune in and easy to watch other streamers if you feel like it.

The way the streamers interact with the chat is a more "TV performance" style than many Twitch streamers, too.

Also, thottery is frowned upon, and making fun of simps is fair game.

But just like regular streamers, vtubers also share various details of their personal lives with the audience, making them more relatable as actual people - which allows parasocial relationships to still be formed, despite the fact that the viewer is only watching what is effectively a digital puppet. It's the best of both worlds!

It's the age old 4chan 'Tits or GTFO' meme.
Since IRL appearance is out of the equation, as the streamer is behind an avatar, the streamer has only their skill as an entertainer to draw an audience.
Though vtubers are a dime a dozen these days, the good ones stand out above the rest, because they really don't have a choice.
If they suck, they don't stand out from the from the crowd, and most will wither and die in terms of subscriptions or live views.
The medium distills streaming down to a simple binary:
Is the streamer entertaining?
No? Then they don't get views, which translates to them not making money, when leads to less incentive to be a good entertainer.
Yes? Then they get views, which translates to them making more money, when leads to more incentive to be a good entertainer.
Tits or GTFO.

There are so many talents out there, you just have to settle upon what might entertain you. Some are excellent gamers, some are amazing singers, some are just plain funny as fuck, some are good at ASMR voice streams (if that sort of thing appeals to you). The majority belong to companies that have rules of engagement (not being total thots, etc.), while others are more lenient about what they can get away with while streaming.

Politics are virtually absent from the content, which is pretty nice these days.

It's also become very lucrative: some of the top VTubers are now millionaires (assuming they aren't retarded with their money). Oh, and the vast majority are actually female (they get doxxed to hell and back so much, some talents have virtually no secrets left)!

But if you have no interest in watching some internet anime chick fail miserably at some insanely difficult game and get super fucking salty at it, it may not be your bag.

I'm slowly starting to change my mind about chicken. It's clear that she cares about the unit unlike some and she didn't really allow her 3d baggage to affect the character too much. And for better or worse, she's one of the members of her gen (and EN) that would be the most noticeable when gone.

I can respect her level of earnestness even if I still dislike her personality flaws, numberfagging ways (though she's seemingly gotten better) and the chicken voice.

Points 3 and 4. I'll give you a concrete example:

Mori Calliope's IRL identity is a dumpy-looking weeaboo woman (pic from a recent stream of her non-vtuber identity). She's not particularly presentable, but she does have skill as an entertainer, for example her rapping is actually really good. With the blessing of a VTuber model, she has attained 1.9M subscribers.

But why bother with the VTuber thing? Why not just go without a facecam? It adds an extra level of engagement beyond just hearing a disembodied voice. Most VTuber models can accurately convey expressions, without the need to expose the real face or talk all the time.

People judge appearances all the time. Streaming as a disembodied voice is sometimes successful, but like with her example, not always (she made several appearances on podcasts, etc but never really broke 5 digits).

Also a bit of elaboration on random points:
  • Men with voice changers are actually quite rare, and they get found out of they get big, because you can hear it
  • Not all VTubers are conventionally unattractive. Takanashi Kiara is known to be a pro cosplayer IRL, but VTubing means she doesn't have to be "presentable" all the time when streaming. Like I said, people judge appearances all the time.
  • Anime models are typically used because they're popular, and because vtubing arguably started with them. "Western" vtuber models do exist, for example one of them uses Engineer from TF2, though they are less popular.
