If the choice is to get vaccinated or not, I thought the protests were all the demands and restricitions that come with getting it or not getting it.
The most I've seen talked about is that "every day this goes on, the worse the government looks and the more they'll be forced to end this with violence".

They forget what he got into hot water for several times over the course of his administration, like sidearming women or stiffing environmentalists because he wanted the pipeline. Largely because they don't know.
I'm sure they also don't realize just how astroturfed these protests have become by the American right-wing, or that what sympathy did exist among the Canadian public towards the truckers has been eroding owing to that fact combined with the obvious economic impacts trickling down into other industries. Further, the idea that 80%+ of Canada's population is vaccinted is probably not known to most of them, who assume that the US's unusual roman obstinance is somehow a global fact of life.
Banks or payment processors? Finance is a complicated subject as to its interaction with politics, and is effectively why crypto/blockchain was created: the original point being literally just to create a means of transaction which government actors have no possibility to interfere with. Naturally even this is somewhat imperfect, as China has shown by cracking down on exchanges - making it harder to cash out on crypto.
Processors are in a weird space wherein the service they are offering is still fundamentally a service, subject naturally to their own Terms of Service. These tend to be a little more loose and fast than those of the banks, which allow them to exercise more discretion in terms of granting or revoking access to their service. It will probably always be the case that they operate this way, as - let's ignore the concerns of government for a moment - there is literally zero corporate or capital or business incentive to let your service be used by political extremists. You run the risk of litigation, of governments wanting your receipts, of that awkward conversation with the rest of your consumer base about the fact that the government can force you to hand over paper trails - it's not worth it for the virtual pennies that political activists generate in revenue. Where does the line between extremist and 'normal' lie for payment processors? Effectively wherever they decide.
When it comes to banks and making this decision, the plain and simple of it is that they will always fall under the purview of world governments. It is really boring and dry as fuck to read about the Fed or other central banks, but these banks perform vital tasks for the other ones in clearing transactions, shifting debt, buying and selling it, etc. etc. Reserves on hand on the Fed, for example, are used to leverage out and balance transactions at other banks, and the flow of capital is absolutely crucial to the normal day-to-day balancing of those banks' sheets. Naturally, if you receive a service from the federal government, you have to abide by the terms it sets for access to that service. That coupled with general regulations as to how a bank can operate, and the natural wariness of banks to be involved with anything that remotely smacks of criminal activity... yeah, you're going to be subject to their discretion.
Put simply, the truckers are breaking Canadian law. It shut down US car manufacturing plants for a decent chunk last week, too. Processors are going to be very, very wary about donations going to something that they see as expressly violating the law and disrupting commerce. What's in it for them to allow those transactions through? On the flip side, Canada's government might get challenged legally on its use of the central bank to cajole an end to the blockade, but I somewhat doubt the challenge will really go anywhere. If you break the law in the US but you're on the lamb, your bank account is frozen stiff. It happens there, too.
The distinction between this and the BLM protests is pretty simple: the people who have their trucks parked on the side of the road and who are honking and sloganing but otherwise not disrupting commerce are the day-protesters of BLM. Despite all insistence that each and every one of them was evil and should be shot, it turns out that a lot of the day protests had gotten permission to occur with city governments, cleared streets for it, and didn't break shit or start fights or grab a gibs-me-dat for the road.
By contrast, the truckers blocking the road are the rioters. They're causing damage to small businesses and big ones alike, disrupting commerce, and breaking the law. They aren't torching shit or burning it down, sure, but this would only matter if the rioters all got off scott-free. I'm sure this assertion is still being made, but it turns out that a ton of them were quietly rounded up and slapped with fines and jail time - though some, naturally, were able to fade away into the general backdrop of American violence spiking to record rates, sure. They were definitely advantaged by the fact that they weren't wearing their license plates while committing a crime.

If the stars align and fate deems that one day through the course of our normal lives we happen to cross paths, yea, we can go round and round over this. Even if it does, won't accomplish anything.
