If you're in a hurry you can also steam them in the microwave then oil and salt them and finish them in the oven. Filling should be diced bacon and onions rendered down over low heat, butter, cheese, and sour cream.

Baby potatos shouldn't be baked at all, boil them in extremely salty water untl you boil it all off and are left with a crust of salt on them, then douse with some kind of creamy hot sauce like a sriracha mayo.
