How exactly is this years Victory day any different from any other except that Russians get to kill literal nazis again, do tell. Did MoD release a schedule or speculate about timetable for achieving goals set by Putin on day one? At this point some fire in Siberia is a win for Ukraine, somehow.

They will be basically just prolonging their failures unless they go all out and succeed. It's kinda dumb though because Ukraine are gonna be even more reinforced than when their 'surprise mission' first started.

What if we figure that we are in World War 3, and while capturing Kiev would have been an accomplishment, Russia still preventing Ukraine from exporting food and otherwise destabilizing the global geopolitical stage being just as bad?

It's suprisingly capable. Aside from the totally-not-carriers other posters mentioned they have some big capable Destroyers as well.
Modifying the ships is fairly easy as you note (and they're already partway done). What's less trivial is learning modern carrier ops when you haven't used them since WW2. Fortunately they can, and are, cross training with the US to rebuild that capability.
Their subs will only get better as well as the new ones are coming with lithium-ion batteries instead of the old lead-acid ones, which gives them a nice boost.
I suspect they'll probably be doing some cross training with Britain as well since we also operate F-35B carriers as well, and the advantage of having a bunch of cross trained ships is huge in a potential major war.
I would be sure of that, expect RN/USN/Japanese Navy already exercise together, likely have been doing so for decades. With all three navies flying F-35s now, makes eminent sense. Lots of cross-talk, exchanges, etc.

I don't know in other places, but in my nearest surroundings the mood about the war got.. somber? I don't know how to call it. People believed for weeks that Russians are at the brink of collapse, especially after they withdrew from Kiev. That they were to surrender, retreat, stop fighting, sign peace treaty, whatever. Constant barrage from media definitely helped fuel that sentiment. But then the bombings from yesterday and the night happened, and suddenly it's not so good anymore. Russians were supposed to be out of guided munitions by mid-march, yet here we are, with cruise missiles flying pretty much unopposed. Some are asking why the fuck can Russians just fly their planes and missiles nightly with next to no opposition, and why is Ukrainians taking a single village huge news now, when the entire west is supporting them and Russia blocked by everyone (according to media of course).
Granted I am surrounded by people at least twenty years older than me, but at least it was interesting to have a discussion about the war with normies who suddenly suspect something is off, unlike first two months of the war. Ukrainians calling german PM something weird (sausage?) definitely didn't help, because why bite the hand that feeds you? Why would they be so unfriendly when we're helping them.
It's not about the fact that someone can be called that way, more about the fact that prime minister was insulted like that. It's pretty uncommon, and if it happens it has fairly big repercussions.
Also idk where it's common, but definitely not in the area where I live.
