Florida is also two party (Simon lives there). I understand what you are saying, so yes, it is hypothetically possible that Nick could have done it in a one party consent state.

It's also possible Nick recorded the call while in China. Just playing Devil's Advocate.

Yeah I was just about to say this story sounds like it was manufactured after reading this thread to remove all the parts about raging over women and hating exercise that we have been embarrassing the shit out of him for all week. Funny that even though all the obvious sanitization this story still makes it sound like he's gay for Jaden.
