We don't know too what extent they're enbling her, but it's true that at this stage there's probably not much you can do.
As far as I know, it's very hard to treat adults with eating disorders who don't want to get help, since unlike teenagers, there's not much you can legally do against their will.
Ginger is very hard in denial- unlike ghostinmypocket who admits to being sick and know this will kill her.
It's unlikely she'll ever accept any kind of treatment, and even if there was a way for her parents to force her into getting help, they probably think she'd hate them for it.
It's a terrible situation, but it's always inccredibly difficult to help someone who absolutely refuses to be helped.
