I was just searching for something else when I stumbled upon this guy. He says he's using AI to make art of vtubers, though I don't know any of the details (what program, what are the inputs, etc). He's got some HoloEN and Vshojo ones up currently. Some of them are close and some of them are more... abstract. They have that unnerving uncanny quality that a lot of AI produced images have, but I kind of like them.
