Wanted to get suggestions from anyone else that runs VM labs for self learning.

Currently have Windows Server 2008 and Windows 7 enterprise as a client to domain controller in a lab to learn active directory, saw Microsoft Exchange is also a good thing to learn, and have been told Azure AD is important as well.

Is there any other services worth learning in a lab environment that could help land a Helpdesk job?

What level? You don't need any server or virtualization knowledge whatsoever for a level one help desk gig. Just memorize the following phrase and collect shekels.

Damn, yeah level one, probably over-analyzed job posting requirements.
You're good man, If you want to really stand out I would say a working knowledge of active directory, OIG, Exchange Admin, and Azure will put you in the top 5% of candidates.

Also basic networking skills. You'd be shocked how many IT monkeys don't know how to perform a repeat ping.

I've heard people refer to people like that "Microsoft Certified Jackasses"
True also and I cannot stress this enough, if you don't already do so go to bars for happy hour, cafes, meetups, whatever and talk to anyone and everyone. Develop your social skills. 95% of your co workers are going to be massive spergs that can barely function so if you can be the IT guy that clients love and ask for specifically you will be fast tracked to team lead.

The amicable socially skilled IT guy is so rare that if you can be that guy you will have a huge advantage.

Or even getting soft skills to negotiate contracts if you go into IT consulting.
