You're not imagining things getting worse. Game budgets have gotten higher, texnology used to make them has grown more complex, and the companies making them are mostly working with the same tedious and time-consuming tools and strategies and techniques as they have for the last decade-plus. This also makes any and all retoolings of anything all the more arduous to impliment should the need for doing so ever come about.Just feels like it's worse than ever lately. Maybe I just haven't been paying as much attention as I have of late.
Games haven't gotten worse. Our memories are just more selective about the past because we mostly only remember good games in the past.

Of course they can't. They'd lose money that way. If they release the Wii U game first then less people will buy the NX as soon as possible. More impatient people will get the Wii U game and a Wii U if they don't have one and just wait until another first party game comes out. It's in popular usage. If, well, when Nintendo does some sort of marketing gimmick for the Legend of Zelda franchise, they're going to use the word "Anniversary" all year round. Are you gonna write Nintendo about this?
