I don't know if that scale is just standing flat on the ground all the time but I think every time you pick up and move a scale you need to step on it few times to make sure it's reset. Otherwise it will give you inaccurate readings.

Lot's of scales have the tare function, especially the expensive ones (which I believe that a scale that can weigh a person up to 500 pounds is probably pretty pricey). To maintain a healthy weight she needs just 1500-1800 calories a day with moderate activity to maintain weight. If she was completely sedentary its less.

In ONE MEAL she exceeded her daily calories by 400 calories. There are 3500 calories in a pound of fat. As she sat there eating she ate enough to gain .2 pounds. This doesnt consider anything else she ate that day. While she was eating this she said she was going to order dinner for her and Peetz. Her entire takeout/delivery meal she ordered with Peetz would have been 100% excess calories for the day. If she ate another meal like this, or something typical from her take outs, she's easily at 4000-5000 calories a day. Gaining nearly a pound every day.

A breakdown of Chantal's lunch today where she ate for one hour straight (even though she "wasn't that hungry"):

Her body weight maintenance energy requirements are 3209 pr. day if she is 450 lbs. Even if she is 350 lbs her maintenance is 2665 calories pr day. And that is the requirements for someone who is sedentary. So im not sure where you get your numbers from? The TDEE calculator is a great tool to plan a deficit. If she eats 1800 calories a day she would be loosing weight fast.
