Why do nogs wash/rinse their chicken

There was a fascinating article about this last year (found here). A woman whose mother is from Belize and father is from Nigeria both brought the practice of washing chicken back with them from their own countries. This might make sense for meat that you purchase from a wet market in countries like Belize and Nigeria.

There is also the argument that food for slaves was left in dirty buckets and other unsanitary conditions, so it made sense to wash the meat before cooking it, and this ritual was passed down through generations.

Even though it is a relatively even-handed article in which she fairly quotes experts and chefs who argue against the practice of rinsing chicken, she nevertheless sees it as a necessary cultural norm and ends by saying that she will teach her son to wash chicken before cooking, but going forward she will be careful to bleach all of the surfaces in the kitchen more thoroughly to avoid the increased risk of contamination.

Gotta give dem keeeds a fake reason they're better than wypipo. Does this mean sanitizing the sink/counters will be the black version of finding out Santa isn't real but with more vomiting/shitting?
 
you don't need to refrigerate hot sauce. Bacteria isn't going to thrive in a bottle of aged peppers, with lots of salt and vinegar. Salt and vinegar are preservatives, and they make up most of the bottle of hot sauce.
I think any confusion is just due to 'hot sauce' being such an ambiguous label. You would referigerate a sriracha mayo, but you wouldn't bother refrigerating tobasco sauce.
 
Is this an American thing? What kind of fucked up paprika do you have there, is it just saw dust with red food colouring? Paprika is extremely flavourful and anything more that a teaspoon in a pot will completely overpower a dish.
It must be, because paprika never tasted strong to me either unless it's like smoked Hungarian paprika. Great on popcorn BTW. But yeah as a result you get Labufawnda ooking about how cave beast food ain't got no flavor and the spices are weak

In the case of that black woman she is already using lawry's season salt, and one of the first listed ingredients is paprika, so of course she cant tell the difference with a little extra.
 
If you brine your chicken before cooking (which I recommend doing) then you are actually supposed to rinse it off.
That's true, but it's not what these people are doing. They're rinsing it or even actually washing with soap/detergent in some cases because theyre too dumb to get that cooking kills germs. Wypipo nasty de no be clean de chiken
 
You can salt your meat, ie leach the blood out, and give it a quick rinse with water afterward. It's not a nigger thing, old timey Pennsylvania Dutch and religious jews do it. Meat that's been laying in a pool of blood for a few days do be tasting nasty, so I can see why that practice was kept on but if you buy store packaged chicken its superfluous.

I get mine from a good poultry live market and use it right away, so I have no need to salt it. Washing chicken with soap and water is just dumb.
 
My grandma grew up real country, always washed her chicken. Suspect a slaughtered at home chicken might need a rinse to get debris, blood, skin bits, etc off. She still washes store bought chicken these days. Thats what I was taught too. Sanitize sink after obviously. I quit washing my chicken years ago after my lowly fast food permit course explained the contamination aspect. I dont think its a race thing its a deep south/poor country thing
