Not to comment on her age/appearance but I don't think that's specifically what they like about her. Rem is more or less an incel's wet dream. There's an episode of the show that she's from where she spends the bulk of its runtime confessing her feelings of admiration/love to the protagonist, as well as her fantasies of what their life together would be like (she basically wants to run away with him to a small town to be his tradwife). The protagonist's response is literally "I love Emilia," if you've ever seen that meme, Emilia being the girl he's been after since episode 1, to which she responds "I know, that's fine."

If you just take the scene alone at face value then the protagonist is free to pursue that girl that he actually wants and if that doesn't work out he'll always have Rem to fall back on. If you look at it in context of the things that she's done for/because of him in the past as well as what happens following this scene you'll see that they have a really toxic codependency where he's the only real motivation she has for living and he's not really capable of progressing the plot on his own most of the time so he excessively falls back on her strength whenever someone else tells him to fuck off because he's a retard because she's the only one who will never tell him no so he ends up getting in over his head which forces the people who told him no initially into action. She's eventually removed from the story and his initial response is "Oh no we have to save her!" and that ends up being difficult and things start kinda working out with the other girl so he gives up pretty quickly

There's kind of an interesting juxtaposition where the original author pretty clearly wrote the protagonist to be a loser who sees himself as evolving into a hero but actually continues to be a loser, he's just a very proactive loser who forces the actually competent people around him into action, whereas the director of the show clearly sees him as very cool and tries to portray him in that way but the writing of the books keeps getting in his way
