Looking back at this... can anyone confirm if that was a non-stick pan at one point? I'm second guessing myself now and wondering if it was actually stainless steel and it's black from burned-in grime. If that's the case, maybe he's trying to replicate Big Lenny, who never washed his stainless steel pan (see below)... Lenny would also put the pan in the freezer after cooking with it, as the pan would have maggots otherwise

It's definitely a nonstick pan, and it doesn't look like any of the coating has scratched off...yet. That "texture" is the reflection of the spatula. He definitely shouldn't be using a metal utensil, though, and Chef at Chef Cook should know that.
