Thats a good point, a really good point actually. Replacing a decent amount of drywall can get expensive very quickly, is time consuming as hell and requires you to actually have some idea what you were doing. I the relevant questions are:
1. Who specifically did the drywalling itself. JF himself? Did he hire someone? Have someone helping him? If not why not?
2. How much drywall was actually replaced? In what part or parts of the house? It was supposedly done in what 3 days? So i'm thinking it couldn't have been too much. The last time I had some drywalling replaced due to some water damage it took about that long to do a room and part of an adjoining hallway. So are we talking about replacing it in just one area? If so, why there specifically and nowhere else?
3. How much did he spend doing it? If he spent a fair bit and only did a small area there had to be a specific reason for it. and if this is the case why did he 'sterilize' the whole house instead of that area? If there wasn't a specific reason for this like a burst pipe or whatever then why spend a significant amount to do it and why so quickly? Why didn't he do this the first time she left or with previous women leaving?
4. Was anything else replaced or removed? I mean like carpeting, flooring, furniture and things of that nature. If so, why?
All things considered they're questions that deserve an answer. The cops will be just as eager to hear the reason as well

Theoretically perhaps. But should the RCMP recover her phone they'll do a forensic analysis to check for just that kind of thing. It would pretty much sink him the moment any trace of such an application was discovered. There would be no way of explaining it that didn't point directly to him and it would scream that he did something to her. Most programmers would have enough sense not to go that route

Indeed. His statements and actions are, yet again, contradictory. Like you said he put all the time, money and effort into pretty much immediately doing that cleanup job and by his own previous statement did it because she wasn't coming back. Now he is suddenly unsure about whether she will and says he's open to it. That doesn't fit with his previous justification for his answers or the cleanup job itself. He knew she wasn't coming back or he wouldn't have done it. Why do it at all if he didn't know? I mean the previous 'disappearance' when she was very much in contact with others she was only gone for a couple weeks before she showed back up. How could he be so certain she wouldn't have done the same thing this time? He didn't even wait to start doing it, he started the cleanup almost immediately. Why?
At an absolute bare minimum he knows more than he is saying. Considering he seems perfectly willing to incriminate himself and talk about shit he shouldn't be during the investigation I think its safe to say any deliberate withholding of information should be treated as highly suspicious. Whatever he is hiding he is hiding for a reason

I agree, its likely to go international before too long. While I don't disagree its a good way to dispose of a body, for him to do it that way he would pretty much have to have access to a boat. Dumping the body off a dock or too close to the shore would end up likely resulting in parts breaking off as she decomposed and floating back to the coast where somebody would find them, as thats what bodies tend to do unless you dump them far enough out. He doesn't have a boat. If he rented one or whatever there would be a record of it and getting a dead body onto a boat (or even to the shore or a dock if he was that stupid) is harder than it sounds and pretty hard to do without risking getting caught. Especially if its in pieces
