Texans would be mortified. Actual Texas chili made with chuck roast, real dried chilies, cumin, etc. is very good.
There is a sweet spot where the cheese becomes part of the broth if you cook it in. However I use it in beans with some form of spice not chili.
Dried anchos are really nice for this, if you want it mild. Almost anything else in the universe can also be added unless you're in Texas and add beans, and then they'll lynch you and no jury will convict.

I like Branca. I always appreciated his commentary during any of the Rekieta streams I watched back when he was, ya know, entertaining.
