the other side treats them like someone in New York is gonna be like "I have a tip on which tunnel little smodle is in I know that hostage!" and also is doing this so the other side tears them down so they can film it and dox them.
I think - more than a little - that it's also a manifestation of community grief and anxiety. A lot of Jews are feeling very anxious right now and were (understandably) completely horrified at the slaughter of innocents in Israel and the kidnappings. So I think there's an element of showing their faces to keep them in people's prayers, along with perhaps just a "look at these innocent children and think about the atrocity you might be writing off with open throated support for the Arabs who did this".
Likewise I don't think everyone who's ripping those posters down is necessarily all TKD either - there may be anger at how Palestinian children, who have often been victim of Israeli state violence or kidnapping (a lot of the "prisoners" that Hamas wants to trade for are children; Israel is one of the few countries that will use military courts - and thus no due process or jury - to convict children) have rarely been featured in Western media when there's been ongoing troubles over the years, and there may also be a perception that these posters are indeed an insulting provocation as obviously missing person posters pasted on a London or New York bus stop are not going to help find a Hamas hostage. (For the record I
don't support tearing down or defacing missing person posters for these reasons).
Not every Jew is le happy merchant scheming away and not every Arab is a frothing-at-the-mouth terrorist, they're people and sometimes people can have flawed but human reactions to crisis and trauma, especially something they feel powerless about. I'd say
a lot of poster exchanges are probably playing out somewhat like you're suggesting - rage bait posters vs complete idiots who think Israel bad. The black woman's reaction was especially galling because the Jewish woman wasn't "attacking" her, merely trying to grab back the posters she'd ripped down.
Speaking of which, our favourite bagel eating poster ripper Colleen Topping had unfortunately set her website up to block most crawlers (probably because of spooky AI stealing art) but the older hits do have
some presence. So here's Colleen's shitty art.

She did have some figurative pieces that were... okay, I guess, but they were self portraits yet didn't actually look like her so I'm not giving her points for that.
Her friend, Luci - well, take this with a
hefty pinch of salt but apparently the pooner was in fact an MtF and, completely unsurprisingly was molesting a 16 year old and forcibly got a woman pregnant while abusing her.

I can't find the origin for the shared screenshots or anything credible to back it up (the account doesn't post anything that much, although does seem vaguely inline with "teenager who could be groomed by a troon") but the Canary Project indicated that she used to operate under the name "Zoey Hornbeck" and found a LinkedIn saying she was a sushi chef in Richmond (which would tally with meeting Colleen at art school) with this photo -

and separately I found an account on Chess.com (which believe it or not is weirdly a bit of a troon red flag because a lot of online twitter troons made an account there and the chat feature was being used for a grooming/paedo ring)

So... jury's out, but I could buy Ms "The most antisemetic thing is zionism, not ripping down your prayer vigil posters" is actually an abusive predatory bloke and we've been clocking him the wrong way.
