I think it's because Bob has managed to trick people into thinking he's this big Mario expert, when in reality all he knows about the character is what he remembers from articles he read as a kid, the cartoon, and some videos/reviews he's seen. He's good at bullshitting and pretending he knows what he's talking about, because he believes his own lies. In Breaking Bad, Saul once told a woman he was Kevin Costner and she slept with him because he believed it. And I remember Barney Stinson saying something similar in How I Met Your Mother. They didn't really advertise how much it had, and a couple people with heart conditions died after drinking it. Bob's basically saying that a sociopath who doesn't get why Panera grunts don't get excited about raising shareholder value is also the sort of person who would create killer lemonade.
