Yeah, it's not a terrible list anyway, even though he got there in the dumbest way possible.What disgusts me the most about that tweet is not the cheeses he chose, but why he chose them. He views cheese as a topping, not a food to be enjoyed in its own right. It's very American.
Mozzarella is not a terrible base for lots of things, it melts well and also works on its own or with vegetables, would probably go for a Gouda as a base cheese instead though.
Cheddar is kind of redundant if you have the Gouda already for slices, and doesn't melt as well anyway, probably something with more attitude, Feta is nice and a somewhat crumbly cheese for salads and the like.
Bleu is less of a specific cheese and more of a range that have those edible molds added so it's cheating anyway. You'd want something soft here to round it all out, maybe a nice Camembert.
That's just off the top of my head but would cover most if not all of your cheesy needs as applicable. I have seen Rick (fat) post the food he eats at bars though, I doubt he really has any sense of taste, that would just get in the way of him shoveling calories into his mouth.
Edit: Gouda is a proper noun how shameful of me.
