They are supposed to, like any private business that collects financial data, which arguably can include your full name, protect that info in accordance with their jurisdictions privacy laws.

Additionally, all the dispensaries in my jurisdiction have CCTV and signs stating you are on camera for security purposes. Perhaps the person who works in a dispensary in Canada who posted previously can confirm whether or not their stores uses CCTV as well.
Most of us in the modern OECD nations are on CCTV several times a day and as long as the owner deletes the tape within whatever time frame local law states you have no action against them.
