I'm not going to lie, I don't think most bar tenders and waiters are looking at the sex area. They look at the birth date and can barely be assed to look at the name. They just do their job.
Honestly, I think it would be hilarious if a non-passing trans person had their license looked at and someone just said "Wait, you're trans? I thought you were just an effeminate man (MtF)/butch man (FtM)." Sad, many such cases.
