Neoliberalism undid that. The first world pig-farm shitshoveler job is now done by people willing to do it at the risk of looming deportation, payment is under the table and below the legal wage limit, living conditions is a barracks assembled out of shipping containers and a porta-potty as your only choice of hygienic excrement evacuation. The employment security is that if you end up say, being overcome by a lack of oxygen near the vast pools and slipping under the ocean of pig shit, you simply are not to be talked about again and everything goes on as normal.
At least, unless there is an outbreak of Swine Flu killing a large proportion of the pigs or the barrel price of crude oil goes above 150 dollars, then the farm simply is now economically redundant and the supply of pigs is now somewhere over a few borders where the cost of pig farming is cheaper and the regulators more bribeable. This is simply the most economically rational solution, as determined by many people with far more important jobs and titles than mine.
In short, the argument that one should just go out and accept any job available only ends up reinforcing this system. It makes things worse for everyone who is not at the top of the pyramid.
