Most of the people I've seen do this aren't particularly serious about it, just joking about the existence of a stereotype that they may have some relationship to. Usually if the statement is true, it's about residual culture from past generations that may have carried down. Not via inheritance, via interaction and who raised them. To use your example, if some Irish immigrant beat his wife two generations ago, violence in the household might have carried down for a few generations. And if that was common within a particular community the stereotype becomes "an Irish thing" just like nigger chimpouts.
