That was definitely one of the saddest steaks I've ever seen, and I actually laughed when I saw the cold butter sitting on top. I'm very much on team sous vide but I think the way he seared it, if you can even call it a sear, was to just throw it on a charcoal grill that had sat too long and already burned out so only the grates were hot.

I'm not too big into charcoal in general, but if you're gonna finish a sous vide steak with charcoal just cook it straight on the charcoal chimney. Get the chimney roaring, pull a grate off your grill and slap it on top of the chimney. Give it a minute to get hot, throw your steak on there for 20-25 seconds per side and you've got great grill lines and a very significant crust because your steak was totally bathed in purifying flame.

Personally my preferred method is just to blast it with a torch (not a puny blow torch, but one similar to what Guga uses) but a close second is cast iron on a gas burner at full blast

Just got to the part of the most recent MATi where Josh mentioned considering replacing his YouTube watching with Internet radio

I have a lot of fun picking countries off of Foobar 2000's built in radio list and checking out some random stations, though I'm sure there are lots of good options for Internet radio beyond Foobar/VLC.
There is something really nice about radio that you don't get from listening to a video or a stream, doubly so for talk radio, and it's usually a better listening experience since it's designed to be audio only.
 
If you need a radio station. I recommend 91.1 WREK Atlanta . They are the GA tech college radio station. They play songs that have never been on radio before. Also nearly no commercials. I have heard a sponsor like maybe once a day.

actually did get America to the moon. The internal calculations of the Apollo Guidance Computer, as well as in Mission Control and MIT were metric. The display units on the DSKY (the computer display) and in Mission Control were then translated back to freedom units ™️.

Why don't you go try metric time while you are at it?
Metric is literally a liberal construct to abolish traditional calculation.
