Usually you would want to broil it a few minutes before it's fully cooked to crisp the skin and finish cooking it and dumping a roux on top really didn't help it in that regard. It's probably because they don't have a diverse diet, a lack of fermented foods & fiber, eating refined carbohydrates, sugars and alcohol which stress the liver. Also avoiding nutrient dense foods such as liver, which is a very hard food to make taste good and get used to eating but it is probably the best thing you could add to your diet. But if they would have more foods like liver more often (once a week or every 2-weeks) and cooking regularly in a cast iron skillet they probably would not be having iron deficiency.Also, I don't know if it's been mentioned, but black people have like 2x the chance of developing diabetes compared to white devils. Wow thanks for posting this! See, this shit is why I love the farms. We use cast iron but not enough to make any measurable difference and this seems like an easy way to boost your intake. They're $40 apiece on the website but I'll be checking for dupes. Providing them would probably actually make a good charity. They last generations.
