Also, if anyone's insane enough to try and archive all his streams, JewTube cuts off the VODs at ~12 hours, so anything longer than that would have to be pulled from Twitch, which means gigantic files (the VOD above lists 720p/1080p only at 60FPS, with files being ~13G/23G), and no subs for anything after the 12 hour mark.
Pulling from twitch isn't the hardest part since yt-dlp likely has routes for it. Failing that there's this little project I found on github: lay295/TwitchDownloader but I haven't used it personally so your mileage may vary. It includes chat downloading and rendering too. No auto subtitles sadly.

To make the files themselves palatable for local uploads use a software like handbrake which is old but gold. The command line inclined can use their choice of ffmpeg spin or wrapper. Clipping can be done with your preferred software. I'll put out Kdenlive and DaVinci Resolve as free video editing options.

Some general pointers for people looking to archive full streams and lower their quality:
  • Drop the resolution to 720p at maximum. Resolution is a huge contributor to file size. Very little of the text he puts on screen is worth preserving in full HD so 480p might be the happy medium between readability and file size.
  • Experiment with the bitrate. A lot of Jason's clipped streams just have him moving in front of a static IDE or MS Paint. 2500kbps is likely more than enough for this case specifically and won't cause too much compression artifacting. At a rough guess 1600kbps would be serviceable for code streams. Gaming streams require higher bitrates to maintain the image and contribute to a higher file size.
  • Use an efficient encoder and file type. MP4 can always be tweaked to trend size:quality ratio downward. WebM is the gold standard for size:quality ratio but it is a long and resource intensive rendering process from experience. Better for smaller clips.
  • H.264/265 MP4s are likely the best bang for buck here. You can also shave excess file size by re encoding the audio to 180-120kbps or lower without losing much clarity. The only thing relevant to archive is his voice anyway.
I'd like to invite other kiwis to add to this with their preferred values and best practices for video archives. These are fairly generic pointers for anybody interested in archiving and re encoding video.

Keeping the full raw streams would be nice but extremely impractical. Even the most dedicated kiwi would be giving up hundreds of gigabytes of space just to house Jason's shitty streams. Storage is cheaper and more plentiful than it used to be but that's still wasted space. With proper tuning the quality loss will be negligible compared to the storage gains.

Bitrate is something complex to add. I can say that if you're using vp9, 90% of the time you can get great results with a 2 pass encoding with 300-500kbps for 720p and slow preset on ffmpeg. Some videos with a lot of fast move, flashing and more(like AMV) you will ended up with blocking but any youtube documentary style video is more than fine.

Also, use VBR(Variable BitRate), when you use VBR the encoding uses the best option but set the average video to that bitrate(constrain the filesize to that bitrate), for example, on VBR an 3 seconds white screen won't use 500kbps but almost nothing as it's the same, and leave more bitrate to the rest and a screen with more things will have extra bitrate left(it can use more than 500).

For audio I would go to opus. An 64kbps opus can be equivalent to an 128+kbps acc.

Also, for better filesize and quality, use software encoding aka do not use nvenc/QSC. While it's almost real-time, you rely on the hardware implementation of the algorithm so you can't optimize as good as with software, the disadvantage is that it's very slow.

Hardware encoding is great for recording the screen/app, converting videos and stuff when the filesize isn't a problem but the speed

This above is for when you want to get the best quality for a filesize, constrain to filesize, if you want to constrain by quality, you should use CRF(Constant Rate Factor) instead with 2 pass. This will get the best filesize for the quality(CRF)
