Everytime I order groceries I get 3-4 russet potatoes. If my shopper is black they will grab prepackaged potatoes wrapped in plastic. Every. Time. They do this with other produce, need a single bunch of spinach? Here's a plastic tub. A single cilantro? Here's a bag. I figured it was laziness, not wanting to get a produce bag and then grab individual potatoes so I once gently asked if the store was low on produce and was told "gurl Der wuz BUGS flyin round in der I got chu da good ones."

Not picking the obviously off produce does not seem to pop in as an option, one fruit fly and errthing is icky and dirty, need the more expensive "clean" potatoes in plastic. Perhaps I'm the weird one for expecting there to be a handful of fruit flies in produce, perhaps it is still laziness. All I know is white women have the ability to grab fresh produce with no issues.

Black americans used to be conservative church going people heavily invested into basic family values, as much and sometimes if not moreso than some white families in America. It's kinda like how you don't see chinese people bitching about working on railroads and instead they encourage their kids to actually do well at shit now? There was even a sales video made ages ago to try and explain that the average american negro wasn't some uneducated retard like people assume they were, and that selling to them was basically a vertical market at the time.

The only thing the general black population in the US retained from that, was what became an obsession with expensive shit in an attempt to show off. The whole reason modern black cities like detroit look the way they do is white flight, because white people saw wtf was going on and left as soon as they could. Imagine if the rate at which black home ownership skyrocketed up until the 50s along with having a stable family, had actually endured(instead of tapering off at the low 40% range for the past 70 years) and how different the US would look because of it. Because that's what the fucking norm was.

Except for some relatively small downtown areas today, most of detroit looks like a fucking apocalypse hit it by comparison to a century ago. They still exist, they just don't sell. Gary Clark, Jr., Buddy Guy, Taj Mahal, and Robert Cray are all incredible musicians. I do it in a bowl. Grated cheese, slowly drizzle in pasta water while mixing. The important part is that the water can't be hotter than 60°C/140°Freedomheit or it gets the grainy texture. Just keep practicing it, it will turn out good eventually. I'll add a video in a minute.

At 3:40 here, different recipe but the cheese preparation is the same as for cacio é pepe. I've been doing it like this ever since i first watched the video.

Make a cheese/pepper paste with the pasta water, add the pasta to a sauce pan, and keep the pasta water boiling. Put the sauce pan on top of the pot of boiling water, then add the cheese paste.

This is called a Bain Marie and will allow the cheese to form the sauce slowly avid not split.

If it’s too thick add a bit of pasta water, too thin a sauce put your sauce pan on a gentle heat she reduce SLOWLY.

You get a perfect cacio e pepe every time.

This also works great for carbonara. My current method for making carbonara and which never messes up (meaning it doesn't turn into pasta with scrambled eggs and bacon) is just sorta deglazing the guanciale/pancetta/bacon with two ladles of pasta water (depending on how much pasta i got), take pan from heat, put cooked pasta in, put egg and cheese mixture over pasta and then just stir, stir, stir until it emulsifies, which takes like 30 seconds. Comes out perfect every time, i struggled with getting a good result before doing it like this.
