I've been seeing people bring up Mei and the Hong Kong protest in relation to Palestine fan art virtue signaling. However, that's just not the same.

Blizzard were (and definitely still are) huge China dick suckers who banned anti-CCP signs or rhetoric from events. So in response, people started to make Mei (a Chinese character) a symbol of the protest because what will Blizzard do? Ban their own character (who acts as their token Chinese representation) from their Overwatch events? It was a direct fuck you to Blizzard and their cucking to Winnie the Poo.

Now look at the Palestine art. What does Miku, a character from Japanese creators (who as far as I know either have no strong opinions on Israel and Palestine or at least aren't vocal about it) who is likely Japanese herself have anything to do with either country? Or what about Sonic and its characters who (if my limited knowledge of Sonic lore is correct) aren't even from Earth.
