Apparently they just didn't distinguish between v and u (until some point) and thus only used the letter v, making it somewhat context sensitive of how its pronounced, as I gather. Weird sandal midgets

I think it also saved some time to use a V when carving words on buildings and such. When you think about how many U's are in Latin the time savings really add up.
