Why are the "Analog Horror" and "ARG" genres so popular now?

It's a fad. They come they go, they come around again.
Also you can watch them freely on youtube and it tends to bleed out onto other social media platforms (ARGs by the nature tend not to be limited to a single platform), so it's easy to stumble upon and then go down the rabbit hole... and the semi-participatory nature tends also to catch people's interest I guess.
