Considering the output of Disney Wars, this nostalgiabait goyslop would be a gem in a coalmine compared to Kenobi or The Acolyte.

I mean they already had him ruin Nick Fury for Secret Invasion, so sure, why not have a pointless TV show that has no thought put into it at all? Also make sure that the guild mandated writers somehow are completely fucking incapable of making a plot long enough for a TV show run. And make sure the producer is incompetent, lame, and gay. Ideally also a woman, because we need those, despite how our parent company is belatedly and halfassedly trying to change course.

It'll have a couple of dozen shills and bots try to run the numbers up for Parrot Analytics too.
 
There were EU reasons for why they don’t do this right? Jedi think it’s dishonorable and bad form, and the Sith think that it makes you a megacuck because you can’t beat them with pure power?
It's also a risky idea in a normal fight because if they dodge it, your weapon is out of position.

I'm pretty sure those were "After the fact" explanations. Whenever it was brought up in an actual book the excuse always was that it was just a really risky and dangerous technique and lightsabers don't actually turn off and on as fast as in that video.

I think not having your saber activated leaves you open to force shennanigans as well

Activation delay and extension time (it's there if you look hard enough) means that you've just given your enemy a massive opening with a weapon that's practically an instakill if it touches you, at best it's mutally assured death.

Also force users can essentially use bullet time and read intentions, so they'd have some insight on what you're trying to do as well.
 
It is not just risky, but if you aren't duelling there is no reason for your enemy's soldiers not to shoot you if you suddenly can't deflect their shots.

In the time leading up to the Prequels, Jedi mostly have been facing various bad guys with guns, it isn't that useful skill to learn.
