The only ones that are kinda difficult is stuff like Thai food with Meekrob which if you do wrong could burn your house down, Thai Iced Tea which never tastes like the restaurants, or Tom Kha Gai which isn't hard but is also never quite like the restaurants. You can still make most of it easily at home. Hell there's even good Tom Kha Paste you can buy for like 3 bucks which will last you years and is an amazing hangover/cold cure.
