It would almost seem like the opposite: maybe incest is considered appealing because it's obviously taboo for everyone involved but there isn't really a power differential, and nobody gets hurt like they might in porn featuring something taboo like adultry?
Perhaps the rise of incest fetishism is actually a sign of a more sensitive and progressive society?

It could be that none of the actors/actresses are actual family the viewer and (for sibling stuff) the viewer is an only child. In that case, it's the fantasy of sharing a home with an attractive, available woman who is comfortable around the guy. A shortcut for awkward people who don't know how to approach women.

Maybe you just haven't come across it, but blackmail porn is very common, which is exactly what all those fall under. Not my thing really, but it's certainly abundant, just maybe not always labeled as conveniently as the stepcest stuff since pornhub doesn't allow blackmail as a search term apparently. Mind control, hypnosis, and similar tags all bring up related vids though and they are a dime a dozen.

Brazzers actually used to have a whole series dedicated to quasi-rape scenarios, called Pornstar Punishment or something like that, but they deleted it all when James Deen got hit with the fake metoo allegations. Wasn't niche either, it was full of their top stars at the time and you can't get more mainstream porn industry than Brazzers.

It's funny that I don't wake up every morning and see not even a quarter of the things you're describing OP. Then again, I know my boundaries and limits so I don't socialize with no-life zoomers because I think a lot of them would be best served in woodchippers followed by meat grinders and finalized in a bonfire pit.
