You know how many people read this thread who are 2, 1 or 0 generations removed from Italy? They were bringing this from home and most likely had the sauce and pasta separate so as to not make it soggy while traveling. My grandma would put a LITTLE bit of sauce to mix into the main pasta then you'd add more as you like. There really are no hard and fast rules with Italian food beyond using fresh ingredients and making sure it tastes good. This isn't just a black people problem by the way. I've seen white Americans crying about food in Italy as it doesn't have the 5 tons of fat, sugar, and corn-starch like the versions they eat at home.
