The reason is that Nick thinks it's noble to "like" his wife. He's made it very obvious that he doesn't like his kids for example but loves them unconditionally. This is exactly how he feels about his wife. He thinks tons of people "love" their families but don't "like" them. As such it's an incredible demonstration of character that he still likes his wife (especially if you believe the theory that Kayla cheated on him first). I know this sounds really retarded but this is how he thinks.

I hate that this makes 100% sense when I put myself in Nick's mental shoes.

Nick was probably the child who thought that he deserves a treat frok his parents for not melting down when he failed to get what he wanted as a child.

Reminder: not only did Nick fail to keep his own story straight with that January/March discrepancy, he also contradicted himself a third time with another version of the story happening in late April according to his last Coomalot appearance. Adding that we now have four total iterations of this story of which at least three contradict one another and the fourth even might.

Not to defend Nick, but he has always been bad with details. He hAs played fast a loose with them and timelines when it suits him or he cannot be arsed to check. His chat and fans used to keep him straight on so many things, but left to his own devices, his non-effort is more noticeable.

The only needed consistency in Nick's stories is that of what is convenient to him.

Nick and Kayla decided to live out in the middle of bumfuck nowhere miles away from any form of activity, and then decided to sign up to every fucking activity for their children. Nick is directly responsible for the driving situation he is in, and he chose to make his own problems worse. People who bitch about the problems they are solely responsible for earn the mockery and disdain. Actually, Nick deserves much worse.

I do not disagree with your point, but rather I wish to point out that Nick has been demonstrably shown to have lied about availability of grocery delivery in this very thread. I am equally sure he is exaggerating the driving.

As much as the isolated locale lacks the amenities of a large metropolitan city, there are many conveniences of civilisation that he could have used to feed his children and ensure a supply of household goods--he simply chose drugs instead.
