if u dont buy the cheapest carrots, they won't be bitterif you grow carrots under stress, poor soil, and water, and pick them too early they can come out bitter. Or if you store them poorly or too long they can go bitter.
I love chomping down on a raw carrot straight out of the vegetable bin in the fridge, and in my lived experiencethe larger carrots that have been in there a bit too long go bitter near the leafy end. (solution is dont eat the last inch or two)
