If by "tempermental" you mean "easily breakable", that is a whole other issue unrelated to what is currently being discussed... which is the fact illegals are working in farms in the first place.

As I understand tomatoes, like a few other crops, have sort of 2 classes, the hardy ones that can be machine processed and often end up in products like sauces where any machine damage doesn't much matter, and the more fragile ones that get hand picked and end up looking nicer and are sold for produce in stores or to restaurants, etc. Also, when things ripen at different times with the machine you don't get a choice you have to do the whole field, by hand you can do a couple passes for maximum ripeness, once again more important for non-sauce tomatoes.
most family farms can't afford that kind of equipment. That comes with generational AG wealth that stems from endless government socialist gibs.
