That man is probably assuming she's filming him for bad purposes, maybe as a spy for a rival. He's worried she's documenting his face and where he works to target him for violence. He's exposed to the street at that market stall every day, so he's right to worry.
There's sectarian murders and revenge killings all over Syria right now, including Damascus. That's why she hears small volleys of gunfire in her livestreams, only a couple shots from one gun instead of multiple people shooting at each other. Think targeted assassination vs full gang battle.
The street vendor and other people she's filming have to worry every day about the risks they face just doing business with the public in a lawless violent shithole...and here she is "tee-hee!" filming them out the car window. The implications of filming random people in public are much different than when she did it in Canada or Thailand.
Her car is also moving slowly in traffic, so she and Salah can't even get away if violent people storm that car to get her phone or rob her. Even as stupid as Salah is, I'm surprised he can't see why this is a bad idea.

She's got that phone sitting out on the table in full view of everyone who will stare at the freakshow white pig-woman. I'm sure many people there can guess at a glance the brand/model of the phone. There's also the 2nd phone Salah is using to film her.
What's the street value of two stolen phones of those types? Does she have a western passport on her? What are the odds of a robber getting caught? All calculations street thieves do on the move in shithole countries...
EVERYONE can see Chantal and Salah aren't capable of fighting off robbers. Flashing multiple phones around unnecessarily in Damascus is poor risk management.
