Why is this happening to anime? Not just the surge in unneeded remakes, but downgrading to plastic pastel art styles while at it
It's probably because most of the people doing the animation learned the same style, from the same sources, maybe even in the same schools sometimes, and there's not much room for innovation. I do agree that it makes things look very samey, but if you look back at previous decades, you can see pretty much the same effect if you look back at the 2000's, the 90's, or even the 80's.

Arguably the worst example of this trend i've seen is Lupin III, with the last two parts combining softened 1960's characters from the original book with completely new characters obviously designed with different rules and a different style in mind. No idea why they don't try to respect the original maybe they just don't care or don't have the time.

In racing anime, the cars depicted, aside from the obvious Japanese cars, seem to be mostly European, with some American ones. Is there a reason why Korean and Chinese cars aren't depicted in those shows? Is it because those companies refuse to license them, there's no demand/fanbase for Korean/Chinese cars in Japan (even though BYD has been pushing more into Japan, and is even making a Kei car solely for the Japanese market), the shows don't want to depict them for the same petty reasons why East Asian countries hate each other, and in the case of Chinese cars, depicting them in a less than perfect way would risk getting the show or even the entire anime company banned by the CCP?
Could be due to a lack of references, or just a lack of starpower. Gun nuts making mangas usually use whatever is popular in movies or they can find as airsoft & non-firing replicas for references, so i assume there's probably something similar going on with cars. Even when doing stuff in their own turf aside from 3-4 guns native Japanese firearms are themselves very rarely depicted.
It could also be that they're not very popular in the locations depicted in said anime, if the writers try to be contextually accurate.

lack of starpower
Korean and Chinese cars are generally unpopular with "car guys" because they just aren't enthusiast's cars, and racing fans since they tend to lose a lot. Hyundai has started doing well in the WRC in the past decade or so but that's a fairly niche European racing series.

Finished the newest frienen episode and I really enjoyed it

For such a disorganized episode its one of the 2 chapters in one episodes it had a very compelling through line and was shockingly emotional. Plus the fight was really nicely animated it seems like they got done with the Revolte arc and had a ton of budget so they went really ham on this episode.

I definitely wouldn't go that far, but as always the Himmel content is the best. Overall this season had some good bits, but was it as good as the first half of season 1? Nah, not even close. I'm not saying the quality took a major nose dive or anything, but I did want more given what the first season made me feel. If the gimped episode count was due to Madhouse going the ''Ufotable Demon Slayer'' route with Frieren, I sure hope it turns out to be worth it in the end. Onward to the golden land.

The most famous sport car brands are European, Japanese and American, there's nothing much more to it I guess. In Initial D all the cars were Japanese because it was based on the illegal racing scene at the time, in the sequel MF Ghost they introduced international cars to reflect the transition to a professional racing setting with racers from various countries, but the cars are still all European, American and Japanese. The protagonist uses a disproportionately underpowered Toyota brand car but nevertheless wins through the power of perfect drifting, even though the bigger part of the tracks are straight, unlike the winding mountain roads of Initial D.

Starting Gundam with 0079. I think I'll stick with the UC Timeline only, as that's apparently the one most directly handled by the creator

Because they're shit. It would be like polishing a turd. At most it would be meme level like the Italian tanks in Girls Und Panzer.

The real meme level cars would be Indian ones, since no one cares for them, and not even the Indians themselves cared for them when cars like the Tata Nano flopped. Vietnamese cars would also be considered meme tier, since even they don't trust their "main" brand in VinFast.

Also, the Chinese and Koreans have been late to the racing party. As you mentioned, it was only recently that Hyundai starting winning in WRC, and started their touring car division to field their cars like the Elantra N in competition. And the Chinese only started recently making waves into competition, i.e. NIO's involvement in Formula E, and Xiaomi setting a Nurburgring lap with their SU7 Ultra, in addition to their collaboration with Gran Turismo to add the SU7 Ultra to the game, and to create a Xiaomi Vision GT car, and BYD also adding their Yangwang U9 Hypercar EV to Gran Turismo in the future. Chinese brands being mostly EVs also limits their appeal to the racing crowd too.

That's pretty much it. Car guys want classics and overall cool cars. The chinks, for a long time, only made derivative knock-offs that barely held themselves together, and Hyundai has become a decent automaker pretty recently - but it's still not an enthusiast brand. They do good on WRC, but the category is far from a popular motorsport among car guys.

Even when crappy cars need to be present, we want cool crappy cars - like a Morris Mini, a Fiat Panda or even a Talbot - not a random chinese piece of junk.

Good choice, but be prepared: Tomino gets more and more weird as time goes on. Also, don't let the first half of ZZ stop you, the second half is very worth it.

Two of the biggest things for a car brand, especially as it pertains to garnering a fanbase for your cars, are "legacy" and "prestige". People like American, European, Australian, and Japanese cars because they've been around for a long time and have had that opportunity to gain prestige and build a legacy. The gooks and the chinks just haven't done that quite yet, and like you said: The Chinese are more or less all in on EVs which isn't helping them much, and the Koreans have just never been big on building cars for performance or even to a particularly high standard up until fairly recently. American, Australian, and European car brands have a heritage of (overall) excellence that can stretch back a century or more in some cases and the Japs exploded onto the world stage in the seventies and have managed to hang tough ever since.

Hey, not sure if you'd be interested in this but I found a fan edit of 0079 a while ago which sought to combine the TV series and the movies into a sort of "definitive" edition. Haven't seen it in its entirety nor have I seen the original series or movies to compare, but thought I'd mention it just in case.

Tonight in Fate Strange Fake, nothing happens. The little girl is just a Sakura expy, as expected, and has the Black Death as servant(?), guess the writer just straight up gave up on throne of heroes being a thing. It also talks about how magical ability is caused by microbes in the body, so it's literally Star Wars midichlorians.

It all seems to gear into a question of "Ends justifying the means", but it's so sanitized and exaggerated that no fucking way they'll kill the girl, and instead find some magical way to make everyone happy.

I really want to drop Apothecary Diaries. It's just chapter after chapter of Maomao acting like that "Smart characters written stupidly" macro about BBC Sherlock. Please, can someone tell me when @wtfNeedSignUp's spoiler from this post:
happens in the manga? Then I can just drop it after I hit that chapter.

There are a handful of good shows outside the UC. And all of them are canon.
At any rate, the second show you'll be watching is one of the worst shows in the franchise.

The little girl summoned The Pale Rider from the Four Horsemen of the Apocalypse. I'll give Narita that, it's an unexpected ass pull that would make Nasu proud. Those bacteria btw? It made the Meso American gods. Came from the asteroid that killed the dinosaurs. Yes it's that stupid, because Nasu found out the Guatemalan peninsula is roughly where that impact happened.

And so far you're right in the novels. Nobody has died yet and it's all supposedly building to a climactic finale where (in classic Narita fashion) nothing happens. Servants probably just disappear when the Grail is destroyed by something or other. Maybe an Excalibur blast, maybe and Enuma Elish. My bet is on the El Melloi Class destroying it with Gray doing a Rongo Bongo to solve the problem like she does with everything. Sanda gets his excuse for the Dismantling Wars like five years down the timeline and all is said and done
