Yeah, I’m not unfamiliar with the process, I just hated how sweaty I got afterwards. It genuinely feels like a workout to do toffees and caramels homemade. Simple syrups are so much easier though because it’s just sugar, water, and whatever flavoring you’re using, and it doesn’t need to boil as long.
I keep 2:1 sugar to water simple around just because I'm addicted to a number of cocktails that make use of it. I've recently started playing around with adding stuff like mint, orange peel, lavender and what not to them.

Labeling is very important when you start doing this, btw. 🤣

Making syrup is fun. At bars we'd just blend 1:1 and fuckit, since there's no time to simmer stuff

But at home i did plenty for my personal use, 2:1. I've made strawberry, mint, cinnamon (room temp infusion only), mango, but my favorite gotta be strawberry. After straining the fruit you get to blend it with milk so it's nice there's no waste

Finished off my last steak I had in my freezer, what better way than the mound way right...
I cooked it well done with some sherry brown sauce on top:
Cope-> It was one of those shitty "primerib" roasts you get at the grocery store for holidays (got for free :)) I wanted the fat more rendered cuz rare on that steak sucked )

Unless you're reverse searing or using a sous vide, steaks this thick will come up undercooked
 
I would happily eat these meals if I was stoned off my ass. Are Brits just stoned at all meals? Is it some working-in-the-mines, walking around abandoned factories pollution thing?
