They really need to stop using the Inquisitors. They are such useless characters. They were already annoying in Rebels alongside Space Aladdin.

I could only imagine how difficult it was to try and finish it. I wonder if George abandoned it due to time constraints and pacing issues, or if it was just that difficult to try and finish it.

I don't think he would have bothered making any more movies. He likely would have just kept remaking and remastering the six movies he already made. I think he'd still be fine with the infantilization of the franchise, so we'd probably see a lot more kid friendly SW cartoons, but none of the live action series we have today. Lucas was only ever going to make the Sequels as a response to people not wanting the Prequels to be the last SW movies, hence why he resurrected Maul in TCW, to be used as a villain for the ST.I don't think he would have bothered making any more movies.
