That's what the sole meaning of the word used to be and still is for normal people but to quote Wikipedia:

I might have to attend one of these out of morbid curiosity. I can't think where she'd go in London. There is a gay bookshop in Bloomsbury, can't think of any others. Maybe Soho Theatre, but she's a bit small-time for that.

What Sophie is saying here is that just as a person can't be called tall until they're an adult, so the notion that a trans person was always the gender they now claim to be is a lie.
