He was eating space food long enough for the really serious chemicals to be out of his system, and all astronauts get an amazing round of vaccines and treatments prior to launch so that when they land down their immune system isn't totally compromised. This would, to some degree, prevent the worst scenario with disease. Additionally, potatos are super hardy and can resist a lot. The kind of thing that plagues potatos kills ALL potatos.
