Her narratives that her "audience" are harassing her about her actions is low-IQ projection of her own anger at herself for having no self-control and resenting the consequences of what she does. It's why she only chimps out when she can pin it on a haydur like Charlie: it's always gotta be someone else's fault that Chinny makes her own stupid decisions. Likewise, it's why we're "obsessed" with her: her shame and anxiety when she gains ten pounds on a new diet can't possibly be what she deserves, and so anybody who remembers something she said two days ago about losing weight is an antagonising freakjob who stalks her because they won't join in her decision to pretend yesterday never happened.
